Penne all’Arrabbiata

Ingredients:
  • 400 grams (14 oz) of penne pasta

  • 4 tablespoons of olive oil

  • 4 cloves of garlic, finely chopped

  • 2-3 dried red chilies, crushed (adjust to taste)

  • 800 grams (28 oz) of canned chopped tomatoes

  • Salt to taste

  • Freshly ground black pepper to taste

  • A handful of fresh parsley, chopped

  • Grated Parmesan cheese (optional, for serving)

Instructions:

1. Cook the Pasta:

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

2. Prepare the Sauce:

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped garlic and crushed red chilies, and sauté for 1-2 minutes until the garlic is fragrant and golden but not burnt.

3. Add Tomatoes:

Pour in the canned chopped tomatoes, season with salt and pepper, and stir well. Let the sauce simmer for about 10-15 minutes, allowing it to thicken and the flavors to meld together.

4. Combine Pasta and Sauce:

Add the cooked penne pasta to the skillet with the sauce. Toss well to ensure the pasta is evenly coated with the arrabbiata sauce.

5. Garnish and Serve:

Stir in the chopped parsley and mix well. Serve the Penne all’Arrabbiata hot, with grated Parmesan cheese on top if desired.
